Olkowski = Piroshki's

When the weather gets chilly I always want to make these little pocket meals. 
My husband grew up in Detroit eating this Polish dish, so we carry on the tradition.
They are so yummy.....
Here we go....
I start with chopping peppers and onions: (I love chopping and yes, that's a Montana shaped cutting board).

 
Fry them up with some burger:
 
 
Then add whatever ingredients your family will eat. 
I add grated cooked potatoes and cheese:
 
 
This is the dough press I use. 
I purchased it at a little kitchen store but you can find them almost anywhere:

 
 
The dough recipe is on the back of the box...it's so good. 
 
Here's the recipe:
 
3 1/2 cups flour
1 tsp. baking powder
1 tsp. salt
1 Tbs. sugar
1/2 cup cold butter
2 eggs
1 cup sour cream
 
Sift flour, baking powder, salt & sugar into a bowl.  Cut the butter into the flour until the mixture is the consistency of oatmeal.  Beat the eggs together with sour cream until smooth, then add to the flour mixture.  Blend to form a mass & remove to a floured board.  Knead for a few minutes to make dough smooth.  Form into a ball.  Cover & chill in the refrigerator for at least 1 hour.
Makes approximately 12 to 15 piroshki. Bake @ 400 degrees on a buttered baking sheet for about 20 minutes, until they are golden brown.
 
Form a ball and divide it into wedges:

 
 Roll each wedge into a circle:
 

 
Add a couple of tablespoons of filling and place on top of the press.
Press and trim:

 
I like to brush mine with egg wash to give them a crispy flaky finish:
 
 
Bake:

 
Eat:


You can fill them with anything you like - even sweets! 
And they freeze really well, too!
SO GOOD!!!

  5. These look yummy. My grandkids are coming over tomorrow - I think we'll make them. I don't have the press but we can make circles and close them with the tines of a fork. Thanks for sharing.
