breakfast potatoes...and Pyrex!

I had a bunch of left-over baked potatoes from an event the other day.
I could make baked potato soup.
I could make hash browns.
I could freeze the cubed potatoes.
Or - I could make these breakfast potatoes.
 
 
They are so simple and delish!
And it gives me the chance to use my darling little pink Pyrex dish that my friend, Katie, from Pennsylvania, gave me. 
 
 
Isn't that so pretty?
 
 
 I love layered foods - I don't know why - I just like the look of it and the challenge of getting ALL the ingredients on my fork in one scoop!
 
 
 
Here's the recipe:
 
3 cups shredded hash browns
3/4 cups shredded cheese - any kind will do
1 cup diced ham
1/4 cup chopped onions
4 eggs, beaten
1 1/2 cups milk
salt & pepper to taste
 
Spray a 2-quart dish - OR - your cute Pyrex baking dish with cooking spray.  Arrange potatoes evenly in the bottom.  Sprinkle with cheese, ham & onions.  Combine the eggs, milk, salt & pepper.  Pour egg mixture over potato mixture.  Bake, uncovered, @ 305 degrees for about 45 minutes, or until a knife inserted comes out clean.

  4. Sounds delish! I have never frozen potatoes, but I guess when I think about it you can buy them frozen so why not? The pink bowl is so cute. I could collect dishes all the live long day, but then I would have to find some place to keep them. I need a very large butlers pantry some day so I can indulge my dish wishes ;>)

    1. Dish wishes - I love that! I have to hold back from purchasing every pretty dish I find! You can freeze the potatoes after they've been cooked.

  5. Oh yummy. I'm definitely going to do this. Wonder if I could use some Ore-Ida hash browns from the freezer? Just cook them up as usual and use those? My husband would love all this. Thanks for the idea!
